Simplicity at Its Best, a Fresh Take on Fish Soup

If there's one thing I admire about a restaurant I like, it's their willingness to make an effort to accommodate my "special" requests. For a small restaurant with limited staff, accommodating a special request or altering a recipe can be a hassle. But some are simply so kind that it becomes their pleasure to provide excellent service and ensure their customers are happy. I believe that's why 52 Seafood Restaurant has been growing its customer base—not only because of the quality of the food but also the warm and hospitable service.

Today, I had an amazing experience when my special requests for the food I ordered were accommodated. The dish, called fish head noodle soup, normally comes with noodles, but since I was in the mood for rice, I asked to have the noodles replaced with rice. I also requested that no cream or milk be added to the dish. Both requests were granted, and they even went above and beyond—the presentation and arrangement of the ingredients looked fantastic and delicious!

It's quite common here to add milk or cooking cream to a fish soup dish, but it's not something I prefer. So, I asked the restaurant to keep it simple and leave out the milk. I'm glad I made that request because it turned out to suit my palate perfectly.

Without the milk, the freshness of the ingredients really stood out in this dish. The flavors of the ginger and tomato became more prominent and served as the main source of flavor for the soup. I think it makes more sense this way, and the simplicity of the taste has made this dish one of my favorite healthy and comforting meals.
