Macaroni with tomato sauce and prosciutto

The idea for this dish was given to me by @foxkoit. I was at work, waiting for something, cruising the Hive network, and reading the latest posts including his Spaghetti day.

Since my wife has already announced that she will be late, I will prepare this for lunch when I get home.

When I write these recipes I always write quantities for 4 people because we usually cook for the whole family. For 4 people we need:

  • 450-500 grams of pasta
  • 3 tomatoes
  • half a pepper
  • one medium-sized onion
  • a couple of cloves of garlic
  • 50 - 100 grams of grated Parmesan cheese
  • 50 - 100 grams of prosciutto
  • salt, pepper, olive oil

First, cut the onion, garlic, and pepper into small pieces.

Then peel the tomato (I wouldn’t peel it in the summer, but this industrial tomato has quite a hard peel) and cut it into smaller pieces just like before.

I tear the slices of prosciutto into smaller pieces with my hands. The prosciutto is very salty and has a pronounced taste, so we use it more as a spice (if we want the dish to be meatless, we omit the prosciutto).

Everything that needs to be cut, grated, and torn has been prepared. We are left with cooking pasta and preparing the sauce.

Pour two tablespoons of olive oil into the pan and wait for it to heat up well. Then add the onion, garlic, and paprika and fry for a few minutes.

After a few minutes, when the onion softens, add the tomato pieces. Stir and fry on high heat to soften the tomatoes. Wait a few minutes, reduce the temperature to minimum boiling.

While the tomato sauce is slowly boiling, pour about a liter and a half of water (3 times the amount of pasta) into the second pot, add salt and wait for the water to boil, and add the macaroni.

After about ten minutes of cooking (you can do less if you like al dente or a little harder), drain the water, leave a deciliter.

Even hot macaroni (we should not rinse and cool them !!!) is added to the pan with the sauce and sprinkled with prosciutto. And stir slowly, the pasta is still cooking and absorbing the liquid. If we estimate that there is not enough liquid, add another deciliter of water leftover from cooking macaroni.
And the dish is ready.

Serve with a mixed salad. And parmesan should not be missing.
